Ingredients:

    • 4 oz tilapia skinless & boneless filet
    • 1 1/2 tbsp olive oil
    • 1/4 salt
    • 1/4 tsp ground black pepper
    • 1/4 cup fresh blueberries
    • ¼ cup grape tomatoes
    • 1/2 nectarine, halved and sliced
    • 1 tbsp chopped walnuts
    • 2 oz baby arugula
    • 1/2 honeycrisp apple, with skin & cored and sliced thinly
    • 1/2 lemon, juiced

Directions

    1. Season the tilapia with salt and pepper.
    2. Drizzle a good amount of olive oil into the fish.
    3. Grill the tilapia for 6 minutes, turning halfway through.
    4. Transfer into serving plates.
    5. In a large bowl, combine fresh blueberries, grape tomatoes, sliced nectarines, chopped walnuts, arugula, and sliced apples.
    6. Season with a pinch of salt and lemon juice.
    7. Mix the salad well and divide it into two servings.
    8. Place on the plate together with the grilled fish.
    9. Serve immediately.

    • 2 oz watermelon chunks
    • 1/2 tbsp organic fresh rosemary
    • 1 1/2 tbsp red wine vinegar
    • 1 cup fresh blueberries
    • 1 cup fresh kale greens, chopped
    • 1 bosc pear, cored & diced
    • 1/2 tbsp dry roasted macadamia nuts, chopped
    • ¼ tsp salt 

Directions

    1. Combine all the ingredients in a salad bowl.
    2. Toss in to coat every fruit with red wine vinegar.
    3. Season with salt to taste.
    4. Serve immediately.

Delicious Fruit Bake with Almond Greek Yogurt

Finish off the meal with this quick summer dessert recipe.  The combination of fruit, Greek yogurt, and walnuts brings enough nutrition to make this a healthy breakfast.  Kids will love this fruit recipe and will have fun helping you layer all the tasty ingredients before baking.  

Ingredients:

    • 1/2 apple, cored and sliced
    • 1 navel orange, segmented
    • 1/4 cup fresh blackberries, sliced in half.
    • 4 tsp almond butter
    • 1 tbsp chopped walnuts
    • 1 tbsp maple syrup
    • 1/8 tsp salt
    • 1 tbsp plain almond Greek yogurt  

Directions

    1. Combine sliced apples, segmented orange, fresh blackberries, almond butter, chopped walnuts, maple syrup, and salt in a small loaf pan.
    2. Mix well and bake in the preheated oven for 12 minutes at 375 degrees Fahrenheit.
    3. Transfer the baked fruits to a serving bowl.
    4. Top with almond Greek yogurt and serve immediately.
