One of the healthiest ways to eat zucchini is to steam it. Steaming helps preserve the nutrients in the zucchini, and it is a very quick and easy way to cook it.  Cut the zucchini into slices or chunks, place it in a steamer basket, and set it over boiling water. Cover the pot and steam the zucchini for three to five minutes, or until it is tender. You can then season it with salt, pepper, and herbs as desired.

1) Zucchini Noodles with Grilled Tilapia

Zucchini Noodles with Grilled Tilapia

“Zoodles” are a healthy, vegan and gluten free alternative to wheat pasta.  Typical pasta can leave you tired and sluggish after eating.  Instead, try this fiber rich way to enjoy “pasta”, without the need to take a nap after.

Ingredients:

  • 4 oz tilapia skinless & boneless filet
  • 2  tbsp olive oil
  • 1/2 tsp cayenne pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 zucchini squash
  • 1 cup grape tomatoes, sliced in half
  • 1 organic radish, cut into thin round
  • 1 tbsp chopped walnuts
  • ½ yellow bell pepper, deseeded & quartered
  • 1/2 lemon, juiced
  • 1 tbsp organic parsley, chopped

Directions

  1. Cut the zucchini into noodles using a spiralizer and transfer to a salad bowl.
  2. Add sliced grape tomatoes, walnuts, and slices of radishes.
  3. In a small bowl, combine lemon juice, chopped parsley, and half of the olive oil.
  4. Pour the quick gremolata into the salad.
  5. Season the salad with salt and ground black pepper to taste; set aside.
  6. Season the tilapia filet with cayenne pepper, smoked paprika, salt, and ground black pepper.
  7. Drizzle the remaining olive oil over the fish.
  8. Grill the quartered yellow bell pepper for 5 minutes and mix with the salad.
  9. Grill the fish for 6 minutes, turning halfway through.
  10. Place the grilled filet  on top of the salad.
  11. Serve immediately.

 

2)  Zucchini Salad with Lime Dressing

Sweet, crisp and refreshing is how we describe this summer salad idea.  The beautiful variety of colors will please the eye, as well as the palate.  Pair with lean protein for a complete dinner recipe.

Ingredients:

  • ½ zucchini squash, shredded
  • 1/2 cup tomatoes, chopped
  • 1/2 red bell pepper, chopped
  • ½ English cucumber, diced
  • ½ honeycrisp apple, cored & diced
  • 1/2 lime, juiced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Directions

  1. Combine olive oil, lime juice, salt, and ground black pepper into a mason jar.
  2. Shake the mason jar until fully incorporated.
  3. Combine all the remaining ingredients in a salad bowl.
  4. Pour in the dressing and mix well.
  5. Divide the salad over the mason jars.
  6. Serve immediately.

 

3)  Lemon Shrimp Zucchini Pasta

Lemon Shrimp Zucchini Pasta

Shrimp and lemon are a perfect summer pairing with zucchini.  Lightly seasoned with garlic, onion and EVOO.  This simple and light dinner recipe will become a favorite this summer.

Ingredients:

  • 2 tbsp olive oil
  • 4 garlic cloves, sliced
  • 1/2 cup sweet onions, thinly sliced
  • 1 zucchini squash, spiralized
  • 6 oz peeled and deveined shrimp
  • 1 red bell pepper, sliced
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 lemon, juiced

Directions

  1. Add oil in a heated skillet over low heat and saute garlic for a minute.
  2. Add sweet onions and spiralized zucchini.
  3. Continue sauteing on medium heat for another 3 minutes.
  4. Then, toss the shrimp and red bell pepper for 4 minutes.
  5. Season with salt and ground black pepper to taste.
  6. Pour the lemon juice and stir well.
  7. Transfer to a serving plate and serve immediately.
