1. Vegan Black Bean Chili

Vegan Black Bean Chili

Ingredients

    • ¼ cup dry lentils
    • 1 cup water
    • 1 tbsp olive oil
    • ½ cup sweet onion, chopped
    • 2 garlic cloves, minced
    • 1 red bell pepper, chopped
    • 1/4 tsp cumin
    • ¼ tsp red chili flakes 
    • 3 oz frozen corn kernels, thawed
    • 4 oz canned black beans, drained
    • 2 tbsp tomato sauce
    • ¼ cup tomatoes, diced
    • 1/4 tsp salt 

Directions

    1. In a large saucepan, add water and bring to a boil. 
    2. Add the lentil and cook on medium heat for 5 minutes.
    3. While the lentils are cooking, heat a medium-size skillet with olive oil. Add the onion, garlic, red bell pepper, cumin, and chili powder. Sauté for 5 minutes, and then add the vegetable mixture to the lentil pot. 
    4. Add in the thawed frozen corn, black beans, tomato sauce, diced tomatoes, and salt. Simmer for 5 minutes. 
    5. Once done transfer to two bowls and serve.

2. “Salsa Verde” Chicken

“Salsa Verde” Chicken

Ingredients:

    • 6 oz boneless skinless chicken breast, cut into bite-sized pieces
    • 1 cup vegetable broth
    • 4 oz Tomatillos, chopped
    • 1/2 cup sweet onions, sliced
    • 2 garlic cloves, minced
    • 1/2 cup cilantro
    • 1 lime, juiced
    • 1/4 cup jalapeno peppers, chopped
    • 1/4 tsp salt
    • 1/4 tsp ground black pepper
    • 2 tbsp olive oil 

Directions

    1. Place tomatillos, sweet onions, garlic cloves, cilantro, lime juice, chopped jalapeno peppers, and olive oil in a blender.
    2. Blend until smooth.
    3. Pour the blended mixture into a saucepan together with the vegetable broth and sliced chicken.
    4. Bring the mixture to a simmer for 8 minutes or until the liquid has been absorbed.
    5. Season with salt and ground black pepper to taste.

3. Air-Fried Buffalo Chicken with Cucumber and Radishes

Air-Fried Buffalo Chicken with Cucumber and Radishes

Ingredients:

    • 1 1/2 tbsp olive oil
    • 4 oz boneless skinless chicken thigh, quartered
    • 1/4 tsp salt
    • 1/4 tsp ground black pepper
    • 1 tsp onion powder
    • 1/2 tsp garlic powder
    • 1/4 cup Sriracha
    • 1 English cucumbers, diced
    • 2 radishes, sliced 

Directions

    1. Combine olive oil, chicken, salt, ground black pepper, onion powder, garlic powder, and Sriracha in a mixing bowl.
    2. Toss until everything is coated well.
    3. Place the chicken in an air-fryer basket.
    4. Air fry for 12 minutes at 375 degrees Fahrenheit.
    5. Transfer to a serving plate.
    6. Add and arrange the remaining ingredients.
    7. Serve immediately.

4. Baked Turkey & Mushroom Casserole

Baked Turkey & Mushroom Casserole

Ingredients:

    • 4 oz fresh turkey breast, diced
    • 1 tbsp olive oil
    • 1/2 cup sweet onions, thinly sliced
    • 1/2 cup sliced button mushrooms
    • 1 zucchini, spiralized
    • 2 tbsp almond butter
    • 1 cup unsweetened almond milk
    • 1/4 tsp ground black pepper
    • 1/4 tsp salt
    • 1 tsp chopped walnuts

Directions

    1. Combine almond butter, almond milk, ground black pepper, salt, and chopped walnuts in a small bowl.
    2. Mix well and set aside.
    3. In an oven-safe skillet, add oil over medium heat.
    4. Saute diced turkey breast for 3 minutes while stirring constantly.
    5. Add spiralized zucchini, sliced mushrooms, and sweet onions. 
    6. Continue sauteing for 2 minutes.
    7. Add the almond butter mixture and bake in the oven for 10 minutes at 400 degrees Fahrenheit.
    8. Remove from the oven
    9. Season with salt and ground black pepper to taste.
    10. Transfer to a serving plate and serve immediately.

5. Chicken Skillet Pasta & Parmesan

Chicken Skillet Pasta & Parmesan

Ingredients:

    • 2 oz brown rice pasta, cook according to package instructions
    • 1 tbsp olive oil
    • 2 garlic cloves, sliced
    • 4 oz boneless skinless chicken breast, cut into bite-sized pieces
    • 1 zucchini squash, sliced
    • 1/2 cup grape tomatoes, sliced in half
    • 1/4 tsp salt
    • 1/8 tsp ground black pepper
    • 1/8 tsp cayenne pepper
    • 1 cup spinach
    • 1 tbsp grated parmesan cheese 

Directions

    1. Pour oil in a heated pan; saute sliced garlic for 30 seconds.
    2. Place bite-sized chicken pieces and cook until golden.
    3. Add sliced zucchini, grape tomatoes, and cooked brown rice pasta; saute for another 5 minutes.
    4. Place the spinach and grated parmesan cheese.
    5. Season with salt, ground black pepper, and cayenne pepper to taste.
    6. Transfer to a serving plate and serve immediately.
