Ingredients:

  • 1 tbsp olive oil
  • 4 oz salmon skinless filet
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 1 tsp taco seasoning
  • 1 whole wheat tortilla
  • 1/2 avocado, diced
  • 1/4 cup fresh cabbage, shredded
  • 1 radish, sliced

 

Directions

  1. Season the salmon with salt, ground black pepper, and taco seasoning.
  2. Drizzle the filet with olive oil.
  3. In a hot pan-grill, grill the salmon for 4 minutes turning halfway through.
  4. Remove from the pan and transfer to a chopping board; cut into small bite-sized pieces.
  5. In the same pan grill, warm the tortilla for a minute on each side.
  6. Place the chopped grilled salmon at the center of the warmed tortilla.
  7. Add and arrange the remaining ingredients.
  8. Serve immediately.

  3. Grill the vegetables for 6 minutes, turning every 2 minutes.
  4. Transfer the grilled vegetables into a serving salad bowl.
