1) Crunchy Pumpkin Bars

Our Crunchy Pumpkin bars are perfect for busy school day mornings or healthy after-school snacks.  Full of protein and fiber, this homemade bar will keep you energized.

Ingredients:

  • 1 cup almond flour
  • 1 tbsp almond butter
  • 4 oz canned pumpkin puree
  • 1 tbsp maple syrup
  • 1 tbsp pumpkin seeds
  • 1/4 tsp pumpkin pie spice

Directions

  1. Combine all the ingredients in a bowl and mix well until fully incorporated.
  2. Pour the mixture into a small baking sheet lined with parchment paper.
  3. Spread out evenly.
  4. Bake in a preheated oven for 10 minutes at 350 degrees Fahrenheit.
  5. Remove from the oven and let it cool before slicing and serving.

2) Pumpkin Pie Pudding

Don’t wait until Thanksgiving for pumpkin pie.  Enjoy it all Fall with our Pumpkin Pie pudding recipe.  A sweet and healthy dessert or healthy enough for breakfast, you’ll be eating it all season long.  Super quick to mix up and prepare ahead of time for when that pumpkin crave hits.

Ingredients:

  • 1 cup unsweetened almond milk
  • 1 tbsp chia seeds
  • 4 oz canned pumpkin puree
  • 1 tbsp old fashioned rolled oats
  • 1 tsp pumpkin pie spice
  • 1/4 tsp vanilla extract
  • 1/2 tbsp maple syrup
  • ½ bosc pear, cored &  diced

Directions

  1. Combine all the ingredients in a medium bowl and mix well.
  2. Pour into a mason jar.
  3. Close the lid to seal.
  4. Chilled before serving.

3)  Air Fried Apple Crisp

Warm, toasty and sweet.   This is a simple, kid friendly recipe you can easily make with little ones.  Just three simple ingredients makes this light, healthy and fun.

Ingredients:

  • 1 1/2 Mcintosh Apples
  • 1/4 tsp cinnamon
  • 1/2 tbsp olive oil

Directions

  1. Core the apples and slice thinly.
  2. Place the apples in a large bowl.
  3. Sprinkle with cinnamon and drizzle with olive oil.
  4. Place the apple slices in an air fryer.
  5. Air fry for 10 minutes at 375 degrees Fahrenheit.
  6. Transfer to a bowl and serve immediately.
