There’s something about meat on a stick that makes it even better.  This recipe is no exception.  Get your protein and veggies all done at once.  Talk about an easy grilled dinner idea!

Ingredients:

  • 1/8 cup balsamic vinegar
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp Jamaican jerk seasoning
  • 1/2 tsp salt
  • 6 oz beef top sirloin steak, cut into bite-sized pieces
  • 1 cup sweet onions, quartered
  • 1 red bell pepper, quartered
  • 1 yellow bell pepper, quartered

 

Directions

  1. Place the bite-sized steak into a large bowl together with the balsamic vinegar, olive oil, minced garlic, jerk seasoning, and salt.
  2. Mix well and let it sit for 5 minutes.
  3. Thread the steaks, sweet onions, and bell peppers in an alternating sequence on wooden or metal skewers.
  4. Grill the jerk skewers in a pan-grill for 6 minutes turning the skewers halfway through.
  5. Remove from the grill and serve immediately.

 

Grilled Skirt Steak with Brussels Sprouts

If Dad wants a steak dinner this Father’s Day, here’s your recipe.  Skirt steak is lean and delicious.  We’ve whipped up a flavorful asian inspired sauce that will make Dad smile.

Ingredients:

  • 4 oz beef skirt steak
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp cumin
  • 1 tbsp low-sodium soy sauce
  • 1/2 tbsp oyster sauce
  • ½ tsp organic fresh rosemary, chopped
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 4.5 oz frozen brussel sprouts, thawed & quartered
  • 1  red bell pepper, quartered
  • 1/2 lime, sliced in half

Directions

  1. Combine salt, ground black pepper, ground cumin, soy sauce, oyster sauce, garlic powder, rosemary, and olive oil in a small bowl.
  2. Brush the skirt steak, brussel sprouts, and red bell peppers with the soy mixture.
  3. Grill the steak for 6 minutes, turning and brushing with the soy sauce mixture every 2 minutes.
  4. Let the steak rest for a couple of minutes.
  5. Grill the vegetables for 8 minutes, turning and brushing with the soy sauce mixture every 2 minutes.
  6. Slice the steak into thick cuts and place it on a platter.
  7. Place the grilled vegetables on the platter and squeeze the lemon to finish it off.
  8. Serve immediately.

Grilled Flank Steak and Vegetable Tacos

Diabetic Friendly Father's Day Grilling Recipes

If Your Dad loves Mexican food, this is the perfect grilled dinner recipe.  Steak tacos with peppers, topped with enchilada sauce?  No one will ever think of it as “diet” food.

Ingredients:

  • 6 oz lean beef flank
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 4 tbsp olive oil
  • 2 onions,  quartered
  • 2 red bell pepper, deseeded & quartered
  • 1 poblano pepper, deseeded & cut in half
  • 2 6″ low carb whole wheat tortilla
  • 2 tbsp mild red enchilada sauce

Directions

  1. Season the flank steak with salt and ground black pepper.
  2. Drizzle two tablespoons of olive oil into the flank steak and set aside for a couple of minutes.
  3. In a large bowl, combine quartered onion, red bell peppers, and poblano peppers.
  4. Drizzle the remaining olive oil and season with salt.
  5. Grill the flank steak for 6 minutes, turning halfway through.
  6. Place the steak into a plate and let it rest for a couple of minutes.
  7. Grill the vegetables for 4 minutes, turning halfway through.
  8. Roughly chop the vegetables and place them in a bowl.
  9. Slice the steak into thick cuts.
  10. To assemble, warm the whole wheat tortilla for 60 seconds on each side.
