Enjoy this low sugar bbq chicken recipe warped in a taco.  What’s not to love?  It’s the perfect healthy summer lunch or dinner idea.  Pack your tacos with plenty of fiber rich vegetables like cabbage and carrots for added crunch.

Ingredients:

  • 1 whole wheat tortilla
  • 1 cup fresh cabbage, shredded
  • 4 oz whole carrots, thinly sliced
  • 1/2 lemon, juiced
  • 1 1/2 tbsp olive oil
  • 3 tbsp barbecue sauce
  • 4 oz boneless skinless chicken breast
  • 1/2 tsp salt
  • 1/8 tsp ground black pepper

Directions

  1. Season the chicken with salt and ground black pepper.
  2. Combine olive oil with barbecue sauce.
  3. Pour the mixture over the seasoned chicken.
  4. On a hot pan-grill, grill the chicken for 8 minutes, turning every 2 minutes to prevent it from burning.
  5. Remove from the grill and slice thinly.
  6. Place the sliced grilled chicken on a serving plate.
  7. Add shredded cabbages and sliced carrots.
  8. Reheat the whole wheat tortilla for a minute on each side.
  9. Cut the reheated tortilla into pieces and place on the serving plate.
  10. Add a drizzle of lemon juice and serve immediately.

 

2) BBQ SHRIMP AND LIME AVOCADO TOAST 

BBQ SHRIMP AND LIME AVOCADO TOAST 

Flavor bursts in this unique bbq toast recipe.  Between the sourdough, lime, queso and bbq, you’ll come back for more.

Ingredients:

  • 1/2 avocado, mashed
  • 1 wheat sourdough bread, toasted
  • 1 tbsp olive oil
  • 1 tbsp barbecue sauce
  • 1/2 tsp smoked paprika
  • 1/4 oz queso fresco cheese, crumbled
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • ¼ lime, juiced

Directions

  1. Spread the mashed avocado into the toasted sourdough bread slice and set it aside.
  2. In a heated skillet over medium heat, saute shrimp for a minute and add the barbecue sauce and smoked paprika. Continue sauteing for another 2 minutes.
  3. Season with salt and ground black pepper to taste.
  4. Remove and place it on top of the bread.
  5. Add in crumbled cheese and drizzle with lime juice.
  6. Serve immediately.

 

3)  American-Style BBQ Panzanella Chickpea Salad

American-Style BBQ Panzanella Chickpea Salad

Enjoy this vegan bbq recipe as a side dish or the main course.  Hearty enough from chickpeas, bread and vegetables, everyone will enjoy it.

Ingredients:

  • 1 Ezekiel bread, slice & cut into bite-sized pieces
  • 1/4 cup baby arugula
  • 4 oz canned chickpeas
  • 2 garlic cloves, minced
  • 1/8 cup barbecue sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 4 oz canned black beans, drained
  • 1/2 tsp olive oil

Directions

  1. In a large saute pan, add oil and saute chickpeas for 3 minutes, stirring constantly.
  2. Add minced garlic and continue to saute for two more minutes.
  3. Add in the barbecue sauce, garlic powder, salt, black beans, and ground black pepper.
  4. Simmer for 1 minute or until the barbecue  sauce is reduced.
  5. Check the seasoning and adjust.
  6. Turn off the heat and place the barbecue chickpea with black beans in a bowl.
  7. Toss in chopped Ezekiel bread and baby arugula to combine.
  8. Serve immediately.
