Ingredients:

    • 2 wheat sourdough bread
    • 1 tbsp olive oil
    • 1/4 cup tomatoes, chopped
    • 2 large eggs, beaten
    • 1/4 tsp salt
    • 1/8 tsp ground white pepper
    • 1/2 oz Feta Cheese, crumbled 

Directions

    1. Toast the sourdough bread slices in a hot skillet over medium heat for a minute on each side.
    2. Transfer to a serving plate and set aside.
    3. Add oil and saute chopped tomatoes for 2 minutes on the same skillet.
    4. Pour the beaten egg and mix well.
    5. Stir until the eggs are cooked through.
    6. Add the crumbled feta cheese and mix well.
    7. Season with salt and ground white pepper to taste.
    8. Scoop out and place on top of the toasted sourdough bread slices.
    9. Serve immediately.

This quick, kid-friendly breakfast keeps adults happy too.  With 4 ingredients, make this in a pinch for an on-the-go snack or meal.  Try mixing it up with your kid’s favorite berry and nut topping for variety.   

Ingredients:

    • 1 wheat sourdough bread, slice
    • 2 tbsp peanut butter
    • 1/4 cup whole strawberries, slightly mashed
    • 2 tbsp chopped pecans 

Directions

    1. Spread the peanut butter into the sourdough bread slice.
    2. Top with slightly mashed strawberries and chopped pecans.
    3. Serve immediately.

Easy Chickpea Scramble Toast

Chickpeas are the star of this healthy breakfast toast recipe.  Easy Chickpea Scramble Toast is a great vegan breakfast recipe.  You won’t be lacking in protein.  Fresh squeezed lemon juice and grape tomatoes keep this fresh and light.  A perfect summer breakfast idea. 

Ingredients:

    • 1 pumpernickel bread, sliced
    • 4 oz baby arugula
    • 8 oz canned chickpeas, drained
    • 2 tsp olive oil
    • 1/2 cup grape tomatoes, sliced in half
    • 1/4 tsp salt
    • 1/4 tsp ground black pepper
    • ½  tbsp sesame seeds 
    • 1/2 lemon, juiced 

Directions

    1. Place the arugula into the pumpernickel bread slice; set aside.
    2. Place chickpeas, olive oil, and lemon juice in a blender.
    3. Blend until smooth.
    4. Season with salt and ground black pepper to taste.
    5. Scoop out the blended chickpeas and place them into the bread slice.
    6. Add in grape tomatoes and sesame seeds
    7. Serve immediately.
