3 At-Home Dinner Recipes for Valentine’s Day

1. Spiced Skirt Steak & Sweet Potatoes

    • 6 oz frozen broccoli florets, thawed
    • 1 red bell pepper, diced
    • 4 oz beef skirt steak, thinly sliced
    • 2 tsp olive oil
    • 1/2 tsp cumin
    • 1/2 tsp salt
    • 1/4 tsp ground black pepper  

Directions

    1. Toss all the ingredients in a roasting pan.
    2. Place in the preheated oven for 12 minutes at 400 degrees Fahrenheit.
    3. Transfer to a serving bowl and serve immediately.

2. Air Fried Scallops and Vegetables

Choose surf over turf, with some lighty air-fried scallops for Valentine’s Day dinner.  Cook time is a short 15 minutes, so you’ll spend more time enjoying this meal together than preparing it.  The delicate but firm scallops are perfectly cooked together with the equally tender asparagus and corn. With a little effort, you can prepare this seafood dish for your special someone in no time at all!

Ingredients:

    • 8 oz sea scallops
    • 2 tbsp olive oil
    • 1/4 tsp salt
    • 1/4 tsp ground black pepper
    • 1/4 tsp cayenne pepper
    • 4 oz asparagus spears, chopped
    • 8 oz canned sweet corn kernels, drained

Directions

    1. Combine all the ingredients in a large bowl.
    2. Toss to combine.
    3. Place the mixture into an air fryer.
    4. Air fry for 6 minutes at 350 degrees Fahrenheit.
    5. Shake the air fry basket.
    6. Transfer to a serving bowl and serve immediately.

3. Creamy Avocado Mousse

Dessert anyone?  We recommend chocolate for your loved one on Valentine’s Day.  No need to load up on excess sugar with our creamy, vegan chocolate mousse.  Instead, we use maple sugar for a little sweetness and avocado to create a smooth texture.  Sprinkle the mousse with crushed walnuts for a little crunch.  

Desserts often leave us sluggish and tired.  But not tonight.  Avocados and walnuts are some of our favorite energy-boosting foods.  After enjoying our Creamy Avocado Mousse, you’ll be ready to keep the night going.  

Ingredients:

    • 1 Avocado, chopped
    • 1 tbsp cocoa powder
    • 1 tbsp chopped walnuts
    • 1 tbsp maple syrup 

Directions

    1. Place all the ingredients in a mixing bowl.
    2. Mash and mix well until fully combined.
    3. Transfer to a serving ramekin bowl.
    4. Serve immediately.
