Ingredients:

      • 1 wheat sourdough bread, sliced
      • 1/8 cup plain almond greek yogurt
      • 1/2 tbsp pickles
      • 2 oz whole carrots
      • 1/4 cup fresh cabbage, shredded
      • 2 oz canned chickpeas, drained
      • 1/2 lemon, juiced
      • 1/4 tsp salt
      • 1/4 tsp ground black pepper
      • ¼ organic avocado, diced 

Directions

      1. Combine all the ingredients (except for the sourdough slices) in a large bowl.
      2. Season with salt and ground black pepper taste.
      3. Top the sourdough slice with the creamy avocado salad.
      4. Serve immediately.

      • 1 1/2 tbsp olive oil
      • 1 large egg, beaten

      • 1/4 tsp ground black pepper
      • 8 oz canned chickpeas, drained
      • 1 green bell pepper, finely diced 

Directions

      1. Heat oil in a large nonstick skillet and add olive oil.
      2. Add in beaten egg and cook for 60 seconds.
      3. Add in chopped tomatoes, spinach, chickpeas, and diced yellow bell pepper.
      4. Sprinkle it with salt and ground black pepper to taste.
      5. Cook on low heat until the egg is cooked through from top to bottom.
      6. Transfer the cooked frittata to a large plate.
      7. Serve immediately.
