If you’re wondering what to eat for breakfast with diabetes, this is your answer.  Swap out your bowl of cereal for this garden fresh egg bite delight.   The combination of protein, healthy fats and fiber keep your blood sugar levels healthy all morning.

Ingredients:

  • 1 tbsp olive oil
  • 1 red bell pepper, finely minced
  • 1/4 cup sweet onions, minced
  • 2 oz baby arugula
  • 3 large eggs
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 cup tomatoes, finely chopped 

Directions:

  1. Brush the muffin tins with olive oil and set them aside.
  2. In a large bowl, mix all the ingredients.
  3. Pour and divide the mixture into the muffin tins.
  4. Bake in the preheated oven at 375 degrees Fahrenheit for 15 minutes.
  5. Remove from the oven and let it cool slightly before removing from the tins.
  6. Serve immediately.

2. Mushroom Egg Muffins

Savory and herby is how we describe our muffin-sized Mushroom egg bites. A bit lighter on the onion flavor, we’ve flavored this batch with scallions instead of sweet onion. A subtle avocado flavor comes from avocado oil instead of EVOO in this clean eating breakfast recipe.

Ingredients:

  • 2 large eggs
  • 1/4 cup unsweetened plain almond milk
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp dried basil
  • 1 tbsp scallions, chopped
  • 1/2 cup tomatoes, chopped
  • 3 tbsp avocado oil
  • 1 cup sliced button mushrooms

Directions:

  1. Preheat the oven to 400 degree F. Grease a muffin pan with oil.
  2. Crack the eggs in a medium size bowl along with almond milk. Add the salt, ground black pepper, basil, green onions, and sun dried tomatoes. Whisk well and then set aside. 
  3. Heat a medium sized skillet with oil over medium heat. Add the mushrooms and cook for 5 minutes.
  4. Add the cooked mushrooms to the egg mixture and pour mixture into the cavities of the prepared muffin pan.
  5. Bake for 20 minutes, or until the center is completely cooked through.
  6. Transfer the egg muffins to a plate and serve.

3. “Buffalo” Egg Muffins

“Buffalo” Egg Muffins

 Directions:

  1. Combine Sriracha and garlic powder in a small bowl, mix well and set aside.
  2. Combine the remaining ingredients in a mixing bowl.
  3. Mix well and pour into a muffin tin tray.
  4. Bake in the preheated oven for 15 minutes at 375 degrees Fahrenheit.
  5. Remove from the oven and slowly remove from the tray.
  6. Serve immediately with a dash of Sriracha.
