Chickpea Buddha Bowl

Small Saucepan.

Ingredients

¾ cup dried quinoa, rinsed
½ 15 oz. can of chickpeas, drained and rinsed
½ cup of cucumber, sliced
½ cup of red onion, sliced

Ingredients for dressing:

2 teaspoon extra virgin olive oil
2 teaspoon lemon juice
1 teaspoon rice vinegar
1 teaspoon pepper
¼ teaspoon salt

Instructions

In a small saucepan, add 1.5 cups of water and bring to a boil. Add the rinsed quinoa and cook it on medium heat for 15 minutes; or until all the water is absorbed. Once done, fluff it up with a fork and transfer it to one side of a serving bowl. Arrange the chickpeas, cucumber slices, and red onion on the other side of the bowl. 

In a small bowl, whisk together the ingredients for the dressing. Mix until well combined. Pour the dressing over the arranged chickpea bowl at the time of serving.
