Who doesn’t love the idea of fluffy waffles?   Our healthy breakfast waffles are made with oatmeal, loaded with fiber.  We sweeten them just enough with maple syrup so they’re still delicious but not packed with sugar. Serve alongside fresh fruit for a well-rounded breakfast.  Our oatmeal-based waffles keep you and your family energized for the day ahead.

Ingredients:

    • 1 cup old fashioned rolled oats
    • 2 tbsp almond butter
    • 1/2 cup unsweetened almond milk
    • 1 tbsp maple syrup
    • 1/8 tsp salt
    • 1 tsp olive oil

Directions

    1. Combine all the ingredients in a blender.
    2. Blend until smooth.
    3. Pour the mixture over a heated waffle iron.
    4. Cook until the edges are crispy and the center is cooked through.
    5. Serve immediately.

Shrimp Fried Rice

Our Veggie Loaded Cauliflower fried rice is so good, you won’t miss the greasy take-out version. We use a combination of coconut aminos and low sodium soy sauce to keep it light without compromising flavor!  Get ready because this one’s about to become a family favorite.  

Ingredients

    • 4 oz  peeled and deveined shrimp
    • ¼ tsp salt
    • ¼ tsp ground black pepper
    • 2 tbsp avocado oil
    • ½ cup sweet onion, thinly sliced
    • 1 red bell pepper, diced
    • 4 oz frozen broccoli florets, thawed
    • 4 oz riced cauliflower
    • 1  tbsp low-sodium soy sauce
    • 1  tbsp coconut aminos
    • 2 garlic cloves, minced

Directions

    1. Heat the oil in a large frying pan over medium heat.
    2. Saute garlic for 15 seconds and add the onions; cook for another 2 minutes while stirring continuously.
    3. Add in the red bell peppers, broccoli florets, and riced cauliflower.
    4. Saute for another 4 minutes.
    5. Add in the shrimp, soy sauce, and coconut aminos.
    6. Toss everything together and cook for an additional 4 minutes.
    7. Season with salt and ground black pepper to taste.
    8. Transfer to a bowl and serve immediately.

Soft Baked Chocolate Chip Cookies

Soft Baked Chocolate Chip Cookies

Invite the kiddos to help mix up these chewy, soft-baked chocolate chip cookies. They’ll love the chocolate.  You’ll love knowing it’s sweetened with applesauce.  No refined sugar here.  We recommend doubling the batch because they’ll disappear fast! 

Ingredients

    • 2 tbsp coconut aminos
    • 1 tbsp unsweetened applesauce
    • 1 tbsp tahini
    • ½ tsp vanilla extract
    • 1/4 cup almond flour
    • 3 tbsp old fashioned rolled oats
    • ¼ tsp baking soda
    • ¼ tsp salt
    • 1 tbsp dairy-free chocolate chips

Directions

    1. Preheat your oven to 350F. 
    2. Line a small baking sheet with parchment paper. 
    3. In a small bowl, mix the coconut sugar and applesauce. 
    4. Stir in the tahini and vanilla extract. 
    5. Fold in the almond flour, rolled oats, baking soda, a pinch of salt, and chocolate chips.
    6. Place the dough in the fridge for 15 minutes. 
    7. Once done, roll into two balls and place them on the baking sheet. Flatten them a little to encourage spreading. 
    8. Bake for 9 minutes or until the cookies are golden brown. 
    9. Serve warm.
