Shrimp Fried Rice

Large frying pan.

Ingredients

10 oz. raw shrimp, peeled and deveined
⅛ teaspoon salt
⅛ teaspoon black pepper
2 tablespoons avocado oil, divided
½ yellow onion, diced
½ red bell pepper, diced
1 cup broccoli, chopped
1 cup cooked brown rice
1 tablespoon low-sodium soy sauce
1 tablespoon coconut aminos

Instructions

Pat the shrimp dry and season with salt and pepper. Heat 1 tablespoon of avocado oil in a large pan over medium/high heat. Add the shrimp into the pan and cook for 1-2 minutes on each side. Once done, remove the shrimp from the pan and set aside. Add the other tablespoon of avocado oil. Add the onion, bell pepper, and broccoli to the pan and saute for 3-4 minutes. Add the rice, tamari, coconut aminos, and shrimp into the pan. Stir to combine and cook for 3-4 more minutes, stirring frequently. Divide between two bowls and serve.
