Mushroom and Spinach Pancakes

Griddle or large frying pan

Ingredients

2 cups chickpea flour
1 teaspoon garlic powder
¼ teaspoon salt
½ teaspoon black pepper
1 teaspoon baking soda
2 cups water
1 cup button mushrooms, sliced
1 cup spinach, chopped
2 teaspoon extra virgin olive oil
4 teaspoon hot sauce (optional)

Instructions

In a large bowl combine the chickpea flour, garlic powder, salt, pepper, and baking soda. Add water little by little and mix it well until there are no longer lumps. Add in the mushrooms and spinach and mix well. Heat a griddle and drizzle a few drops of oil. Pour the batter and allow the pancakes to cook for 2 minutes on one side (or until golden brown). Use a spatula to flip the pancake to the other side to cook. Once done, transfer the pancake to a plate and serve it with hot sauce.
