Marcos Rojas on Creating DishQuo in the Era of Covid

Marcos Rojas is the founder and CEO of DishQuo, a meal planning app backed by insulin science.  Marcos comes from a real estate career, but has always had a passion for health and fitness for over 15 years.  Through his own personal fitness journey, Marcos uncovered a way to increase health, performance and weight loss by utilizing insulin science.

Here he shares his shift from real estate to DishQuo during the global Covid-19 pandemic. His personal journey of uncovering the power of insulin was a key building block in developing the meal planning app, DishQuo.

What kicked off the development of DishQuo?

I was in the midst of launching another business — a gym for beginners.  The gym designed workouts and nutrition plans to feel achievable from Day 1.  When I found a space to open, Covid hit.  My broker tried to convince me the virus would blow over, but I decided to wait.

During quarantine, I shifted my energy to research rather than the building.  Nutrition research quickly became my focus.   What worked and what didn’t?  What would our approach be?  I read How Not to Diet by Dr. Michael Greger and learned about the insulin index.  That’s where things really started to change.

I thought: how is no one talking about this?  It seemed crucial but complicated to implement.  The insulin index only includes single foods, not the combinations we actually eat in most meals.  It seemed like another reason why diets have a 95% fail rate.  If eating healthy is going to be sustainable, it has to be easy and align with how people eat.

How did you discover that the power of managing insulin was the key to unlocking your energy?

During that time of personal research, I learned insulin is the hormone that affects fat storage.   I began to incorporate that into my life with my personal meal planning to meet my fitness goals. I applied the science to keep my blood sugar levels even and prevent insulin spikes.  I realized insulin spikes affect not only fat storage, but my energy levels as well.

Once I learned how to cook the basic principles of what affects insulin my energy went up.  The daily energy crash after eating disappeared.  My productivity skyrocketed.  With my fitness and weight goals, I reduced my body fat percentage as well.

Once I started seeing improvement in my own life, I knew it could have an impact on other people’s health.  The more I dove into this, I knew this way of eating had to go mainstream.  It was something big and would change diet culture.

In 2020, no one knew how long the gyms would be closed.  Suddenly opening a wellness center didn’t make sense.  The fitness industry started moving more online as people stayed home. I shifted away from developing the center and more toward developing a meal planning app.  I knew sharing insulin health with people was urgent.  Eating this way would have a profound impact on people’s health, even more than time in the gym.

During this time, dietician Autumn Enloe, RD, and I began working together to refine the details of the meal plan.  I knew it needed to be grounded in science and meet dietician standards.  From these guidelines in diet and insulin management, DishQuo was created.
